This Leg of Lamb is smoked while all the outer fat and the garlic and herb paste melts into the leg, leaving it tender with a smokey taste that is not overpowering.
Served with charcoal smoked rice with sautéed Spanish onions, crispy seasoned potato wedges, jalapeño peppers, dehydrated red chillies, Serrano peppers, and a generous portion of Tzatziki sauce infused with fresh dill. Serves 5-6 people.
